Organic Pudding Rice

Organic pudding rice is a short-grain variety known for its high starch content, which makes it ideal for creating a creamy rice pudding. Unlike ordinary long-grain or basmati rice, which stays separate when cooked, pudding rice softens and absorbs liquid, resulting in a rich, velvety texture.

To make a good rice pudding, gently simmer pudding rice in whole milk with sugar and a touch of vanilla until the grains are soft and the mixture thickens. Stir occasionally to prevent sticking and enhance the creamy consistency. At ruxstons, we prefer baking it in the oven for a slow-cooked depth of flavour until the top gets a nice caramalised surface. No need for any additions, just enjoy on its own.
