Organic Irish Moss Seaweed is a red algae, which in recent years, while beef and pork gelatin has become less popular, is used for a vegetarian thickener/gel called Carrageenan. You will often see it on an ingredients list for ice cream or vegan sweets. To turn it into a gel, simply boil the seaweed in water until it is fully dissolved then whisk it all together.

 

Irish moss seaweed doesn't have a potent flavour, this is why it is used as a thickener in ingredients because you will not get a strong seaweed taste which could be undesirable. Despite this, adding it to your cooking will add a fantastic source of iodine, which is great if you would like iodine, but are not a fan of the strong taste of traditional Organic seaweed.
