Our Organic Chicken Carcass comes from the Organic Stream Farm on the Quantocks, where chickens are raised to the highest welfare standards, roaming freely in open pastures and fed an organic diet free from antibiotics, and synthetic pesticides. A chicken carcass is what remains after the prime cuts such as breasts, legs, and wings have been removed, but it is far from waste. Packed with flavour, nutrients, and collagen, it is a valuable ingredient for making rich, homemade stocks, soups, and broths. Often there is a suprising amount of meat left to go straight into a soup.
A chicken carcass is ideal for creating deep, flavourful stocks and chicken bone broths, providing a more natural and nutrient-dense alternative to shop-bought options. Slow-simmering the bones over 24 hours releases gelatin and collagen, which support gut health, joint function, and skin elasticity. It is also rich in minerals like calcium, magnesium, and phosphorus, which contribute to bone health. Compared to using just meat, cooking with a carcass ensures nothing goes to waste, making it a sustainable and cost-effective way to enjoy the full benefits of organic chicken.
Please note, our cut chicken is butchered in a non-organic registered butchery.
