You can often spot the difference in grass-fed cattle by the more yellow fat, especially in the summer months when the grass is at its freshest.
When choosing between ribeye and sirloin, note that ribeye tends to be consistently tender due to heavy marbling, while sirloin—though slightly firmer—features a defined fat cap that adds wonderful flavour as it cooks. We will always choose the weight from our stock closest to your choice as possible. However please allow a small ±50g tolerance for your selection.
This beef is hung for 21 days to develop flavour, butchered, then vacuum packed and frozen, perfectly preserving the best taste and quality at its most fresh. Freezing also eliminates any food waste.
