A 100% grass-fed rump steak is a lean cut taken from the upper rear end of the cow, an area that works harder than most. It won’t be as tender as a Ribeye or Sirloin, but it offers a stronger, more robust flavour. Cooking rump steak to rare or medium-rare helps maintain the highest level of tenderness, making it a great choice for those who enjoy beef with full-bodied taste.
Compared to Ribeye or Sirloin, rump steak has less marbling but bolder character, especially thanks to our 100% grass-fed farming methods that deliver a slightly gamey flavour. The outer layer of fat adds extra taste while cooking—resting the steak on this fat in the pan before serving can help lock in moisture and enhance richness. At Ruxstons, we’ve found that cooking rump steak in an air fryer for 7–8 minutes produces a perfect rare finish, balancing lean texture with satisfying juiciness.
Rump steak is naturally high in protein and a good source of iron, zinc, and B vitamins, which help support energy levels and overall health. Grass-fed beef can also provide higher levels of Omega-3 fatty acids and antioxidants compared to grain-fed alternatives. One thing to note is with our farmers only feeding the cattle what they find on the pasture, is that the final beef taste will have a stronger more “gamey” flavour. The layer of fat around the outside will add further flavour whilst cooking and can be used to rest the steak in the pan before serving rather than resting it on the plate.

This beef is hung for 21 days to develop flavour, butchered, then vacuum packed and frozen, perfectly preserving the best taste and quality at its most fresh. Freezing also eliminates any food waste.
