Grass fed lamb fat is a traditional cooking fat known for its bold, slightly sweet flavour with a high smoke point, making it perfect for roasting and frying. Compared to our grass fed beef fat option, lamb fat tends to contain higher levels of oleic acid, a monounsaturated fat also found in olive oil, which may support heart health. Like all grass fed fats, it also contains more omega-3 fatty acids and conjugated linoleic acid than fat from grain-fed animals, with lamb fat often offering a slightly better omega-3 to omega-6 ratio than beef.
Lamb fat really shines in recipes where you want deeper, more aromatic flavour. It's especially good for roasting root vegetables or cooking dishes with Middle Eastern or Mediterranean spices. Try using it to make crispy roast potatoes or pan-fried aubergines to serve alongside our slow cooked lamb shoulder, in this case beef fat would be too neutral, whereas lamb fat enhances and complements the dish beautifully.
