Our 8-rib rack of lamb is one of the most prized cuts, taken from the tenderest part of the loin with the ribs still attached. This 100% grass-fed rack is slow-grown for 9-12 months, developing a rich, full-bodied flavour that sets it apart from commercially farmed lamb, which is often fed cereals to speed up growth. With its naturally succulent texture and delicate marbling, this cut is ideal for a special occasion or an elegant dinner party, serving two to three people with an impressive, restaurant-quality dish.
For a perfect roast, season with sea salt, black pepper, garlic, and rosemary, or coat with Carley’s Organic English Mustard and fresh herbs for extra depth of flavour. Sear the lamb in a hot pan to form a golden crust, then transfer to a preheated oven at 200°C, roasting for 15-20 minutes for medium-rare. Rest the meat before slicing to keep it juicy and tender. For an alternative method, this cut can also be grilled over charcoal for a lightly smoked, crispy exterior while staying buttery soft inside.
The 8-rib rack of lamb is one of the most flavourful and tender cuts, making it an excellent choice when cooking for friends or family. Whether served as a classic French-trimmed roast or coated in bold spices for Mediterranean and Middle Eastern flavours, this cut always delivers a showstopping meal. Generally, people will have two or three ribs each, so an 8-rib rack will comfortably serve two to three people.
For those looking to buy rack of lamb online, this 100% grass-fed lamb guarantees unmatched quality, depth of flavour, and the perfect centrepiece for any special meal.
