Our 100% grass-fed lamb leg is a prime roasting joint, perfect for a traditional lamb leg roast. Larger and leaner than the shoulder, a lamb leg roast has less marbling, giving it a more structured texture that suits a shorter roasting time at higher heat compared to slow-cooked lamb shoulder. This makes it ideal for those who prefer tender, juicy slices rather than fall-apart meat.
Our lambs are slow-grown to 9-12 months, grazing freely on a natural diet of pasture, tree leaves, and wild vegetation. This extended, natural lifestyle results in a full-bodied, slightly stronger flavour compared to intensively farmed lamb, while still keeping the meat beautifully tender.
For the best lamb leg roast, season generously with sea salt, black pepper, garlic, and rosemary, then roast at 200°C for 20 minutes per 500g for a medium-rare finish. A whole 2kg leg will take around 1 hour 20 minutes, plus 15 minutes of resting time before carving. For medium to well-done, increase the cooking time by an additional 10-15 minutes per kg. Unlike shoulder, which benefits from slow cooking, a leg of lamb can be enjoyed pink in the middle, ensuring it stays moist and tender while maintaining its rich, grass-fed flavour.
A whole lamb leg can serve up to 12 people, making it perfect for large family gatherings or Sunday roasts. If you’re cooking for a smaller group, a half-leg is a great option, still offering the same fantastic flavour and roasting experience.

After hanging for a minimum of 5 days, this lamb is butchered, then vacuum packed and frozen, perfectly preserving the best taste and quality at its most fresh. Freezing also eliminates any food waste.
