Our 100% Grass-Fed Fillet Steak is taken from the tenderloin (often referred to as the fillet mignon joint), making it the most luxurious and sought-after cut of beef. Prized for its incredibly soft texture and melt-in-the-mouth tenderness, fillet steak is naturally low in fat and in short supply, which only adds to its exclusive appeal.
Because it’s the most tender cut, fillet steak is best enjoyed rare or medium-rare, allowing the succulent fibres to remain moist and silky. Season simply with sea salt and black pepper, then pan-sear in hot oil or butter for 2-3 minutes per side (depending on thickness). Let it rest for a few minutes under foil to keep all the natural juices locked in. For an elevated finish, baste with garlic, butter, and fresh herbs in the last minute of cooking, or pair with a red wine sauce or classic peppercorn sauce for a restaurant-style experience at home.

We will always choose the weight from our stock closest to your choice as possible. However please allow a small ±50g tolerance for your selection.
This beef is hung for 21 days to develop flavour, butchered, then vacuum packed and frozen, perfectly preserving the best taste and quality at it's most fresh. Freezing also eliminates any food waste.
