Rich, intense and dusted with cocoa, this is proper Belgian chocolate, made the old fashioned way. Duc d’O’s dark chocolate truffles start with tempered chocolate blended into a velvety ganache centre. That ganache is piped, chilled, then rolled in more chocolate to form a crisp outer shell before being dusted in fine cocoa powder. A lot of dark chocolate truffles stop at this part but not at Duc d'O, they add a final rolling step which adds some chocolate shavings to the outside. This process is done while the coating is still soft and it gives the truffles their signature texture and slightly irregular shape. It’s a hands on method that’s slower than machine moulding, but far more satisfying and means you won't find two indentical truffles here!
